“Aloo Paratha”, Punjabis has given so many precious things to India and one of them is their exquisite cuisines. And talking about Punjabi cuisines, how can someone forget about Parathas?

Parathas are considered to be one of the staple food of Punjabi cuisine. It is a bread dish originating from the Indian subcontinent. For Punjabi’s, an Ideally breakfast will always have parathas in it with lots of ghee for richness and a glass full of chaach or lassi. Parathas as breakfast are not only tasty but also is soo heavy that you can never get tired while working all day.

Parathas are generally stuffed with vegetables and the recipe with most popular filling is Aloo (Potato) Parathas. It is one of the simple and easy-to-make paratha recipes that roughly take 45 Min, making it one of those tasty dishes that can be prepared for breakfast.

History of Aloo Paratha

Aloo Paratha is a dish originated from India, and one of the most popular breakfast dishes throughout western, central and northern regions of India. While the history of parathas can be really confusing, due to complication with its origin, but one of the closest pieces of evidence shows that this recipe was an innovation derived by another flatbread called Roti with aloo (potato) in late 1800.

It was a recipe that traveled from Maharashtra to the northern states of India. Later the Punjabis added spices to the Paratha and tossed it with Ghee and butter to enrich its flavor and complimented it with curd. But Punjabis have really evolved it from Aloo Roti to Aloo Paratha, it became the most cherished and beloved dish in India when it was given a Punjabi touch.

Ingredients for Making Aloo Paratha

For Preparing Aloo Paratha

  • 3 Boiled and Peeled Potatoes
  • 1-2 day old dough made with Wheat and Refined flour
  • 1 onion chopped
  • 1tsbp ginger garlic paste
  • 1 tsp. Cumin seeds
  • 1 tsp. Coriander seeds
  • 1 tsp. Carom seeds
  • 1 tsp. Nigella seeds/ Onion seeds (Kalonji)
  • Green chilies according to personal spice level
  • 1 tsp. Chilli Powder
  • 1 tsp. Garam Masala
  • 1 tsp Chat Masala
  • 1 tsp of black pepper
  • A handful of coriander leaves
  • Butter
  • Salt to taste

For Platting

  • Thick Curd as per the small bowl size
  • Tomato Ketchup
  • Small Cube Of Butter
  • 1 tbsp coriander leaves

Recipe Instructions

  • Take a bowl, mix boiled potatoes, onion, green chilies, coriander seeds, cumin seeds, onion seeds, red chili powder, carom seeds, chat masala, black pepper, garam masala, salt, ginger, and finely chopped coriander leaves with your hands.
  • Dust some wheat flour on the roti board and roll round flat chapatis by using the dough that you made 1-2 days ago.
  • Add butter or ghee on top of the flat chapati and stuff the chapati with the potato stuffing we made then flatten it again with a rolling pin.
  • Roast the flattened parathas in a medium temperature on the pan, applying generous amounts of butter or ghee on both sides to enhance the aroma and taste.
  • Note: Don’t make it too much oily.

Platting

Take a white plate of medium size, place the two-round parathas on top of each other and then top it with a small cube of butter and a small piece of coriander leaves. Take two small bowl pour curd in one and ketchup is another, and your dish is ready to get served.

It tastes exceptional when paired with Tomato Ketchup, thick curd or an Indian Mango Pickel.

Hebbars’s Recipe of Aloo Paratha is a little different than ours, she used sweet potato instead of a regular potato. Thus sweetness in that Aloo Paratha is more than the regular Aloo Paratha. As per my opinion, Sweet Potato goes best with Gujrati Thepla but not with Parathas.
